A Thousand Words Thursday - Little Miss M

Here's Little Miss M. This was taken last Spring by a friend who owns a photography business in my home town, Tiny West Coast City, WA. She is sitting on stairs leading to a park that I played at while growing up as a child. Never did I ever dream, as a child, that we would circle back someday and my little ones would be swinging on the same swing, or would be listening to the same classic books. Life just goes by way too fast....stop and remember those gifts that God has given us!!

Barbequed Short Ribs

It's been feeling like fall over here on the West Coast. We've had showers and sun breaks but the evenings have a bit of a chill. Fall reminds me of my Grandma who loved to make warm and tasty meals on cold fall days. Here's one of my favorite classic main dishes:

Barbecued Short Ribs
1 lb beef short ribs (boneless, I buy them from Costco), cut into 2"-3" sections
1 onion, diced
2 tbsp oil
1/4 C cider vinegar
1 1/2 tbsp sugar
1 C catsup
1/2 C water
3 tbsps worcestershire sauce
1 tsp prepared mustard
1/2 C celery, diced
1-2 tbsp salt

Brown ribs with onion in oil. Combine remaining ingredients and add to ribs. Cover and cook slowly, until tender - 11/2 to 2 hours. Serve with rice and fresh green beans. (We love the sauce and sometimes double it when making the recipe)

Thanks to Candid Reflections for mentioning the above saying. I too am wondering where the summer went. I remember thinking in the Spring how wonderful it was going to be to have my little guy (number 3) join his siblings running about playing outside. I couldn't believe that he'd be so big. Oh and we can't forget the nap change. I was looking forward to having more "go here, go there" time with only one nap to schedule around. Well....we've been busy, playing in as much sun as we can, spending time together as a family, taking walks, swimming, vacationing and whatever else we could find to keep us busy. Busy busy busy it's been and now....Fall is on the way. Although, I must say, looking back on the memories we've created brings tears to my eyes. Another summer gone by and another year growing up. I love every moment that I have with my kids. I am so thankful for yet another Season. God bless you all and Cheers....to the up and coming Fall!!!

The Yummiest Cinnabon Recipe Around

Mmmmm I can smell the yummy scent coming out of my oven. It's a sweet cinnamon smell. These wonderful cinnamon rolls are just about ready to pull out of my oven and serve to my friends.

This recipe is from my friend Michelle at Candid Reflections. She brought them to our dear friend Ursula at the hospital the morning after she delivered her third little girl. What a great treat to bring a friend. A treat to remember!

Cinnabons for the Bread Machine

1 cup milk

1 egg

4 tablespoons melted butter

4 tablespoons water

½ box instant vanilla pudding (3.4 oz. box)

4 cups bread flour

1 tablespoon sugar

½ teaspoon salt

2½ teaspoons bread machine yeast

Filling

½ cup soft butter

1 cup brown sugar

2 teaspoons cinnamon

Frosting

4 ounces soft cream cheese

¼ cup soft butter

1 ½ cups powdered sugar

½ teaspoon vanilla

1 ½ teaspoons milk

3 tablespoons real maple syrup (opptional)

Place all ingredients into your machine in the order recommended by your manufacturer. Select dough cycle and start. When cycle is finished, remove the dough and knead enough to punch down. Roll to 17×10. Combine the filling ingredients (nuts or raisins may be add) and mix well. Heat in microwave for 10 seconds to make it spreadable. Spread over rolled out dough with rubber spatula. Get as close to edges as possible. Roll from the widest end into a tight log. Cut into 1″ slices. Place in a lightly greased baking dish, put in a warm, draft free place and allow to rise 20-30 minutes. Bake at 350° for 15-20 minutes. Mix frosting ingredients and frost when rolls are slightly cooled.

Chaos in our house

Ok I must admit I am exhausted today!! We started the day swimming at 9am and Molly, my middle kiddo, swam by herself for the first time. What a great accomplishment. She was so proud and glowing. Then off to the grocery store, with all three, I always feel so bad for the people behind us in line and the lady checking us out. My youngest, couldn't get his Fruit Roll-Up unwrapped and had a screaming fit!! Then off for my oldest son's hair cut appointment. My darling daughter tried to help me entertain the little guy but all he wanted to do was play clean up and spread fallen hair all over the ground. Eeek! I just wanted to scream. I stayed calm....drove home, fed the kids lunch (after unloading the groceries and putting them groceries away). I put the two youngest down for a nap and asked my oldest to have some quiet time. It's peaceful now, I can take a few deep breaths and then....................it's off to deep clean the house. How is your day going? As chaotic as mine? It seems like some days, I just feel like a ball rolling down the hill going faster and faster as the day goes on. So take a break, relax for a few minutes. Even 15 min feels good!!
